Haermosa

Vineyard: Selection from the oldest Grillo vineyard on the estate, located at 500 meters above sea level.

Soil: Medium-textured limestone with a high presence of rock fragments.

Farming System: Guyot.

Grapes: 100% Grillo, hand-harvested.

Yield: Approximately 1.5 kg per plant.

Harvest Period: Early September.

Vinification: After destemming, the grapes ferment exclusively with naturally occurring yeasts and remain in contact with the skins for about 40 days, during which alcoholic fermentation takes place. The wine then rests on the lees until bottling.

Organic Wine

Appearance:

Deep straw yellow with golden reflections.

Aroma:

A highly complex wine where the typical varietal notes blend harmoniously with the spicy and citrus aromas developed during prolonged skin contact.

Taste:

Excellent structure on the palate, with an enveloping mouthfeel. A characteristic saline streak is supported by fine, flavourful tannins. The long, dynamic, and well-balanced finish enhances the wine’s elegance, making it smooth and highly enjoyable to drink.
